Add zest and juice of a Lemon

Lemony Peas 'n Cheese
Those who have been following in bitten, and close friends, will know about my love of peas. And since my Big Pea Purchase earlier this week, I’ve been having peas for supper everynight. Just been playing around making interesting dishes, rather than the boring method of just sticking them in a bowl and heating them in the microwave, though I don’t mind that either
Yes….I love peas
The Recipe
20g butter
50g finely chopped Onion
1 tsp chopped Garlic
1 ½ cups frozen Peas
Salt & Pepper
60ml White Wine
Zest and juice of 1 Lemon
30 g Feta
1 Tbsp Parmesan
Sprig of Thyme
Melt Butter, add onion, fry until it starts to brown, add the garlic, fry about another minute.
Add wine, reduce until almost gone and then add the lemon juice. Now add the peas and thyme. Stir until the peas have defrosted.
Remove from heat and stir in Feta, Parmesan and zest.
Season to taste & serve.

I had it as a main course, just like that, but fry up some bacon and add the bacon and peas to some cooked rice.

Or, after you’ve reduced it a bit once you’ve added the lemon juice….before you add the peas, add about 1/2 cup of thick cream and then carry on, sefve it over some pasta (the fried bacon would work here too)

This recipe will serve 1 as a main course, 2 as a side dish.

Just a few things.
The point is to create simple, easy to prepare meals for those with no time or little confidence in the kitchen. Try to keep the mystery ingredient list below 10 and to easy to find ingredients, things you have in your house. I won’t say no to the odd challenge though
